Mini Monkey Bread

One of my co-workers, Jessica, made this recipe last week and brought a piece to the office for me to try.  It was wonderful and I immediately asked her to share the recipe with me so that Jillian and I could make it this weekend!  I bought enough to double the recipe so that Michael can take some to his co-workers in the morning but I'm not sure Jillian is going to let him leave the house with them, she has already had 3 servings! 

The recipe is from Pillsbury and I found it on their website



Mini Monkey Bread

1/2   cup butter or margarine, melted
1/2   cup packed brown sugar
1/4   cup granulated sugar
2      teaspoons ground cinnamon
2     cans (7.5 oz each) Pillsbury® refrigerated biscuits
Grease or spray 12 regular-size muffin cups. Mix butter and brown sugar; spoon 1 tablespoon mixture into each muffin cup.

Mix granulated sugar and cinnamon in 1-gallon bag (I was out of gallon bags to I used a quart and mixed half at a time).


Separate dough into 20 biscuits; cut each in 6 pieces. I wasn't too exact with this, some I only cut into 4 pieces.


Add pieces to the bag and shake to coat. Place 10 pieces in each muffin cup.


(for anyone that doesn't have Pampered Chef stoneware my pan is not dirty, it's "seasoned" and is clean)

After this step I added to the recipe a little.  When Jessica made it she said she would have liked it a little better if the carmel from the bottom was on the other side too.  I mixed up half a cup of melted butter with 1/4 a cup of brown sugar and spooned it over the top of the biscuits. 

Bake at 350°F for 12 to 15 minutes or until golden brown.

Cool 1 minute; turn upside down (I placed foil over the pan and flipped it over onto the foil so I didn't have a big mess or rolls flying around). Serve warm.

I made this very recipe a couple of weeks ago,which I got off my Pillsbury calendar. It turned out perfect and many of my family and friends said they were fabulous. 2 thumbs up!

I, too, made them from the recipe on the Calendar! Unbelievably delicious!!! I doubled the batch and they disappeared in no time.

I usually make this in a bundt cake pan, The only diff is that I dont do the first step of the butter and brown sugar--I do every thing else though and then as a last step, I pour a stick of melted butter on the top then when it comes out I sprinkle the then bottom, now top of cake with more sugar and cinn-oh and I use four cans of the dough, not just two-it is a big hit in my house. But can't wait to try this one now too.

Looks so good! Just to clarify, you made 2 batches right? (One in the metal pan and one in the stone?) Did they pop out of the stone ok? Did you notice a difference between the 2?
Your assistant did a fabulous job!

Amy - I did, when I went to upload pics I noticed I didn't take pics of the same pan. OOOPPPS! LOL They came out of both pans just fine!

I just made monkey bread for the first time 2 nights ago. My family loved it, but it was doughy in the middle. Even after I cooked it about 20 minutes longer with foil on the top, it wasn't done in the middle. (I didn't use a bundt pan or tube pan, just a large deep casserole dish.) I also boiled the brown sugar and butter first, it made it nice and caramely. I am going to have to try these from now on.

I'm definitely going to try this! Just like the person who commented before me...I tried making the regular monkey bread, and it was doughy in the middle. My grandma and mom have made this since forever, and they never have that problem..can't figure out why I had a hard time getting it to firm up..maybe the elevation.

I am doubling the recipe and adding 1 cup of chopped pecans - sprinkling them over the biscuits as they go into the cups. Instead of putting the butter/brown sugar mixture in the bottom, I am adding the leftover sugar & cinnamon mix to the butter/brown sugar and spooning 2 tablespoons over the biscuits before baking. I like the idea of putting foil over the pan before turning out the minis. My grandson is gonna love them!

I love monkey bread! I will have to try the minis now too! I do mix in a 1/2 package of cook & serve butterscotch pudding to the butter and sugar mix... gives it a really nice flavor! :)

I made these for a bake sale, because I had all the ingredients on hand and I fell in love with them!

...is it bad that I just went through the list of ingredients in my head and realize I have all of them? I really want to make these, but they might kill my diet haha.
